Cheese · Tuscany
A sheep's milk cheese from Maremma, Grosseto province.
A raw-milk sheep cheese of the Maremma and a Slow Food Presidium, made by three producers who work the milk on their own farms. Ages run from 20 days to 180 days and beyond for the stagionato and riserva. No source consulted gives it a DOP or IGP.

Wine and cheese
The riserva end of this raw-milk sheep cheese, 180 days and beyond, is firm enough to meet Tuscan reds built on or blended with Cabernet, Merlot or Syrah, whose tannin and high acidity cut through the fat.
Both come from the Maremma. Morellino is a Sangiovese red with cherry fruit, tannin and high acidity; choose a pecorino at the older end of the 20 to 180 days and beyond range, so the cheese is firm enough to meet it.
