Lantieri (full name Lantieri de Paratico) at Capriolo farms 22 organic-certified hectares. The noble family has documented Franciacorta viticulture going back to the 10th century; the modern bottle-fermented sparkling operation dates to 1974. The Arcadia Riserva is the cellar's long-lees prestige bottling.

Cavalleri farms 40 hectares biodynamically at Erbusco; the family-run cellar on Via Provinciale at the centre of the village is the original modern Cavalleri operation (re-founded 1979).
Tip: The Blanc de Blancs is the entry point to Cavalleri's Chardonnay-purist style; the Collezione Esclusiva extended-lees flight is the upgrade.
1701 Franciacorta at Cazzago San Martino farms 10 hectares organic and biodynamic. The Stefini family runs the cellar with a no-dosage core range; the cellar produces around 70,000 bottles a year across 8 labels.
Tip: 1701 offers a guided biodynamic walking tour with the on-site agronomist alongside the standard cellar tasting.
Mosnel at Camignone (Passirano) farms 42 hectares of ICEA-certified organic vines. The Barboglio family cellar (founded 1836) has the 16th-century underground galleries and one of the appellation's oldest continuous Pinot Bianco plots, plus one of the consortium's original Erbamat trial parcels.
Tip: The EBB single-vintage Erbamat bottling is one of the few examples of the heritage variety at high percentage; book a back-vintage flight to taste it against the QdE.
Ca' del Bosco at Erbusco completed organic certification across its 253-hectare estate in 2014, one of the larger certified-organic Franciacorta operations by area.

Barone Pizzini at Provaglio d'Iseo received ICEA organic certification in 1997. The 54-hectare estate is divided into 29 parcels across the Provaglio d'Iseo and Passirano hills under general manager Silvano Brescianini.
Tip: Animante is the entry-tier organic Brut; the Edizione is the consortium-pioneering Erbamat-inclusive Franciacorta and pairs well with the Animante for an Erbamat freshness contrast.
Ferghettina farms 200 organic-certified hectares spread across 11 of the appellation's 19 municipalities. Roberto Gatti founded the cellar in 1991 and runs it with daughter Laura and son Matteo.
Tip: The Milledì Satèn is one of the appellation's most-poured Satèns by-the-glass; ask for it in the Adro flight.
