About Anthotyro

A traditional Greek whey cheese made from sheep or goat milk and whey. The fresh kind is white and soft or medium-firm, sweet and creamy, with no rind and no salt, commonly a truncated cone, and is eaten at breakfast with honey and fruit; the dry kind is hard and salty and is grated. Stymfalia at Kaliani makes it from sheep and goat whey with fresh milk. The All About Peloponnisos guide lists antho cheeses among the products of Corinthia's small dairies. It is not a protected name.

Light dry rose Nemea

Our pick

Fresh anthotyro is sweet, creamy and unsalted, and is eaten with honey and fruit. A light-bodied dry rose with high acidity and fresh fruit or floral notes sits beside it without weighing it down.

Anthotyro: questions

How is anthotyro different from mizithra?

Very little. English Wikipedia calls mizithra essentially the same cheese, though anthotyros may contain some cow's milk, and says dry anthotyros is a matured cheese similar to mizithra.

What is it used for?

Stymfalia lists it for the table, cooking and pastry.
