Fourth-generation family distillery tracing roots to Quintana del Pidio in Burgos province, where great-grandfather Jose Casajus established the original alcoholera in 1918. The current Burgos city facility produces over 100 references including pomace orujo, herbal and pacharán liqueurs; the Crema de Burgos is a tribute to the local yemas sweet.

DO Ribera del Duero winery in Quintana del Pidio with a separate tradition of distilling grape marc into orujo-style aguardiente from estate Tempranillo pomace. One of DO Ribera del Duero's founding estates, Finca Torremilanos (Bodegas Penalba Lopez) distils estate Tempranillo pomace into marc-style aguardiente as a traditional by-product of their biodynamic winemaking. The estate hotel and restaurant stock the distillate alongside the main wine range.
Felix Callejo in Sotillo de la Ribera produces a small annual batch of aguardiente de orujo distilled from the marc of their estate Tempranillo grapes. Available exclusively through the cellar-door shop following harvest; positioned as a traditional by-product of the single-vineyard wine program.
Bodegas Emilio Moro on the Golden Mile distils a small quantity of Tempranillo pomace marc following each harvest. The clear grape spirit is not widely distributed but is available at the estate shop and served during select premium tasting experiences at the winery.
