About Manouri

A white whey cheese made from the whey of sheep or goat milk, enriched with sheep or goat milk or cream; English Wikipedia calls it a by-product of feta making. It is drained in cloth bags into a cylinder usually 20 to 30 cm long and 10 to 12 cm across, with no rind and no holes. Greek ministerial decision 313028 of 11 January 1994 recognised the PDO and the EU registered it in June 1996. Imathia, the prefecture of Naoussa and Veria, is named in the production area.

Made in: Thessaloniki, Chalkidiki, Kilkis, Imathia, Pieria, Pella, Florina, Kozani, Kastoria and Grevena in Central and Western Macedonia, plus Larissa, Trikala, Karditsa and Magnesia in Thessaly

On the plate

A delicate cheese with a soft, flexible white paste and no holes. English Wikipedia, quoting the Washington Post, gives a clean, subtle nutty flavour with a bit of sheepiness and the barest hint of tang; it holds only about 0.8 percent salt, far less than feta.

Rind: none, eaten fresh

What to pour with Manouri

Dry white of Assyrtiko, Chardonnay or Sauvignon Blanc Naoussa

Our pick

Qualigeo calls manouri perfect with white wine and its flavour rather delicate; English Wikipedia gives only about 0.8 percent salt. A dry, medium-bodied white with high acidity lifts it without weight.

Malagouzia and Malagouzia-Assyrtiko whites Naoussa

Our pick

Qualigeo calls manouri perfect with white wine. The cheese is delicate and creamy with little salt, and these dry, medium-bodied whites with Malagouzia bring high acidity without heaviness.

Semi-sweet Xinomavro rose Naoussa

Our pick

Manouri is mild and creamy with only about 0.8 percent salt, so it can take a little sweetness. A semi-sweet, light-bodied, low-tannin Xinomavro rose does not fight the soft paste.
