Founded 2014 by Yannis Valambous on parcels inherited from his father after he left an economics career in London. Modern boutique cellar at Vourvoulos producing Assyrtiko under the standard Santorini label plus the older-vines Nassitis, Aidani, Vinsanto, Pet-Nat (PetNat) and Mavrotragano.
Tasting: Daily 11:00 to 20:00; tastings with food pairing in the modern Vourvoulos cellar, plus a small restaurant and accommodation through The Vasilicos.

Tip: The Nassitis bottling (older Assyrtiko vines) is the structural step-up from the standard Santorini; the Pet-Nat is a rare ancestral-method expression from the island.
