Picpoul de Pinet AOC (recognised 2013 as a separate appellation) sits on the lagoons west of Sete and produces a citrus-and-saline white from the indigenous Picpoul Blanc grape. Felines Jourdan is among the larger family estates of the appellation with around 80 hectares around the Bassin de Thau lagoon. The entry-tier Picpoul is a textbook sub-EUR12 white and the canonical pairing for the Bouzigues oysters from the adjacent lagoon.
Tip: Drink Picpoul de Pinet young, within 18 months of vintage, with raw shellfish from the Bouzigues lagoon (10 minutes from the cellar). The local oyster huts on the Bassin de Thau serve Felines Jourdan by the glass.

Sylvain Fadat's Domaine d'Aupilhac is one of the foundational quality estates of Montpeyroux in the Terrasses du Larzac zone. The estate is certified organic.

The estate is one of the appellation's quality-reference names at a sub-EUR20 entry tier.

Cave de Castelmaure at Embres-et-Castelmaure is the Corbieres cooperative that has built a reputation for high-quality value Corbieres at the entry price tier. Cuvee No. 3 (named in homage to Coco Chanel's perfume) is the cooperative's most distributed bottling, a Carignan-Grenache-Syrah blend at a sub-EUR12 price that consistently outperforms its price tier in critic blind tastings.
Tip: Castelmaure runs cellar visits with the producer cooperative's playful design-and-marketing approach. The Cuvee No. 3 is the gateway; the higher-tier La Pompadour and Les 3 Mariels sit slightly above EUR15.

Domaine de Cigalus is one of Gerard Bertrand's flagship biodynamic estates at Bizanet near Narbonne (Demeter certified since 2009). The Cigalus blanc is a Chardonnay-Sauvignon Blanc-Viognier blend at the upper end of the budget range (~EUR22), and is the white-wine showcase of Bertrand's biodynamic portfolio. The estate's red Cigalus is similarly priced.
Tip: Cigalus visits combine a biodynamic farm tour with a producer-led tasting at the Chateau l'Hospitalet hotel and restaurant complex. The white sits at the budget ceiling; pair with grilled sea bass or langoustines.
