Lustau's tour introduces the almacenista system: independent small-scale sherry makers who mature sherry in private soleras and sell their stock to larger bodegas. Visitors taste the single-cask almacenista releases that represent the most terroir-driven sherries available.
Lustau produces a Brandy de Jerez Solera and Solera Gran Reserva from its Santiago quarter bodega, using the same oak infrastructure as the almacenista sherry operation. The Lustau Solera Gran Reserva is aged a minimum of fifteen years in Lustau's own Oloroso and Amontillado butts.
