Bernd Philippi at Kallstadt works the Kallstadter Saumagen limestone bowl with a hands-off, oxidative, low-intervention approach: spontaneous ferments, old large oak ageing and almost no fining, producing a cult traditionalist Pfalz dry Riesling.
Tip: The Saumagen R Riesling and the rare 100 percent Spaetburgunder Saumagen are the two cult bottles; both read the no-intervention Pfalz style at a unique extreme.

Steffen Christmann at Gimmeldingen began biodynamic farming in 2004 and the estate became Demeter-certified, working the Idig and Reiterpfad sites for the dry Riesling range alongside a Pinot Noir programme on biodynamic principles.

Thomas Hensel's Odinstal above Wachenheim, at around 350 metres elevation, is Demeter-certified biodynamic and works dry Riesling, Silvaner and Weissburgunder from the steep basalt and limestone hill behind the Wachtenburg ruin.
Tip: The drive up to Odinstal earns the visit on its own; the basalt-and-limestone hilltop above Wachenheim is the coolest single-site Riesling terroir in the Pfalz.
