What it pairs with
-
Fisherman's soup (halászlé)
High-acid Furmint provides a refreshing counterpoint to the spicy paprika-red fish broth. -
Cold-smoked freshwater fish
Crisp acidity cuts through the oily smoked fish texture. -
Cucumber pickles with bread and butter
Classic Hungarian informal pairing; the wine's freshness matches the fermented brine.
History
The Hétényi family maintains a small cellar in Tokaj town, continuing a multigenerational winemaking tradition on the historic wine-street quarter. Tokaj town's position at the confluence of the Bodrog and Tisza rivers has made it the administrative and commercial centre of the wine region since the medieval period.
