Palate: concentrated dark fruit, elegant structure, present tannins, full-bodied finish

Alois Lageder's flagship single-vineyard Cabernet Sauvignon from the spectacular steep slope of Roemigberg above Lake Caldaro. Planted to Cabernet in 1986 and Demeter-certified biodynamic; cherry-red colour with ruby shimmer, concentrated aromatics, full-bodied with elegant present tannins.

What it pairs with

  • Bistecca alla fiorentina
Cabernet's firm tannins frame the marbling on the rare-cooked steak; the wine's structure stands up to a Tuscan-style cut.
  • Roast venison with juniper
Game and dark fruit echo each other; the wine's spice register meets the juniper.
  • Aged Asiago Stravecchio
Mature alpine cheese matches the wine's depth and structured tannins.
  • Slow-braised short ribs
The wine's full body and elegant tannins suit slow-cooked beef; concentrated fruit matches the reduction.

History

Lageder planted the Cor area (Latin for 'heart') of the Roemigberg vineyard above Lake Caldaro with Cabernet Sauvignon and Petit Verdot in 1986. The steep slope is one of the family's most prized parcels; Demeter biodynamic certification was achieved in 2008 alongside the rest of the estate.

Frequently asked about Cor Roemigberg Cabernet Sauvignon

What does Cor Roemigberg Cabernet taste like?

Cherry, black currant, fine spice and floral lift on the nose; concentrated dark fruit, elegant structure, present tannins and a full-bodied finish on the palate. Full-bodied with high acidity and a long structured finish.

When should I drink Cor Roemigberg?

Drink between 5 and 25 years from vintage. Young vintages benefit from 60-90 minutes of decanting; cellared bottles develop tobacco, cedar and dried-herb complexity.

What food pairs with Cor Roemigberg?

Bistecca alla fiorentina, roast venison with juniper, aged Asiago Stravecchio, or slow-braised short ribs. The wine's structure suits red meat and aged cheese.

Is Cor Roemigberg biodynamic?

Yes. The Roemigberg vineyards have been Demeter-certified biodynamic since 2008, with the broader Lageder estate following the same protocol since the same year.
