Palate: citrus, aromatic, full-flavored

Pale straw-yellow Sauvignon from steep gravelly slopes above Bolzano at 500 m: nettle and grapefruit on the nose with developing flint mineral, crisp acidity and persistent aromatic palate.

What it pairs with

  • Pan-seared trout with herb butter
Mountain trout's delicate flesh sings against the Sauvignon's grapefruit acidity.
  • White asparagus with hollandaise
The wine's nettle-and-elderflower aromatics mirror the asparagus and lift the egg richness.
  • Roast chicken with lemon
Crisp acidity cuts roast-chicken fat; lemon echoes the wine's citrus core.
  • Goat-cheese salad
Fresh chevre meets the Sauvignon's flint and grapefruit head-on.

History

Mock is Cantina Bolzano's Election-line Sauvignon Blanc, drawn from steep gravelly slopes around the village of Mock at 500 m above the city. The site's altitude preserves acidity and the gravelly soils deliver the cuvee's signature flint as bottles age.

Frequently asked about Mock Sauvignon

What does Mock Sauvignon taste like?

Pale straw with greenish hues; nettle, peach, grapefruit, acacia and elderflower on the nose with developing flint. The palate is crisp, aromatic and persistent at 14% alcohol.

When should I drink Mock Sauvignon?

Drink between 2 and 8 years from vintage. The wine is unoaked and developed in stainless steel, so it shows best between three and six years when flint notes mature.

What food pairs with Mock Sauvignon?

Pan-seared trout, white asparagus with hollandaise and roast chicken with lemon are the producer's canonical pairings. Goat cheese salads also work.

Is Mock Sauvignon oaked?

No. The wine ferments and ages entirely in stainless steel after a short cold maceration and light pressing, preserving the Sauvignon's mineral lift.
