Gutiérrez Colosía's Amontillado follows the standard El Puerto progression from Fino biological ageing to oxidative. The riverside location moderates the cellar's temperature and humidity, producing an Amontillado that retains a lighter, more delicate character compared to the richer, more concentrated Amontillados of Jerez's inland bodegas.
