What it pairs with

  • Carne con tomate (pork with tomato)
The full-bodied Oloroso pairs with this Andalusian pork braise's concentrated tomato sauce.
  • Morcón (Iberian salami)
The oxidative depth and full body complement cured Iberian sausage.
  • Aged cheese
Dry Oloroso is a natural companion to hard aged Spanish cheeses.

History

La Cave Morales Oloroso is produced from Palomino Fino fortified to Oloroso levels without flor contact, aged through a fully oxidative solera in the small family bodega in Jerez's historic centre. The wine is available primarily through Lustau's Almacenista programme and specialist importers.
