What it pairs with

  • Bocadillo de calamares (fried squid sandwich)
The nutty, savoury Amontillado pairs naturally with fried squid in the traditional Spanish sandwich.
  • Cured meats and olives
The dry complexity of Amontillado enhances the saltiness of cured meats and olives.
  • Gazpacho
Dry, nutty Amontillado alongside cold tomato-pepper soup is a traditional Andalusian pairing.

History

La Cave Morales is a small family producer in the historic centre of Jerez whose soleras have been maintained since the late 19th century. The Amontillado is made from Palomino Fino that begins as a Fino under biological ageing and transitions naturally to oxidative ageing as the flor diminishes.
