What it pairs with
-
Oysters with mignonette
Petrol and slate notes, combined with racy acidity, are a natural match for briny oysters. -
Crayfish tails with dill cream
The wine's tight mineral structure cuts through cream while echoing crustacean sweetness. -
Mature hard cheese
After 10 years, the Schütt opens into a nutty, textured wine matching aged cheese.
History
The Schütt Ried is a cooler, steeper site in the Loiben cluster that produces the most angular and mineral of the Knoll Rieslings. The name refers to the loose scree (Schutt) that characterises the site's primary rock soil.
- 1978 — First Schütt Riesling Smaragd bottled as a distinct cuvée from the cooler, steeper Schütt parcel
