Pergole Vece is from Le Salette's century-old pergola-trained Corvina vines at 450m elevation in Fumane, producing an Amarone of particular freshness and aromatic complexity; high altitude preserves acidity while old vines add concentration.

What it pairs with

  • Braised beef short rib with polenta
Firm tannins and concentration of dried fruit embrace the long-braised collagen richness.
  • Aged Monte Veronese d'Allevo Stravecchio
The sharpest, most aged Veronese mountain cheese provides salt and fat contrast to the wine.

History

Franco Scamperle established Le Salette in 1986 and identified the old pergola-trained Corvina vines on the high Fumane hillside as exceptional material. Pergole Vece (old pergolas) references these century-old training systems and is one of the most altitude-expressive Amarone in the Classico zone.
