In the glass
Aroma: orange marmalade, walnuts, old wood, dried herbs
Palate: beeswax, roasted hazelnuts, dried apricot, a hint of sweet spice
VORS Palo Cortado blended with a small PX component for balance. Profound complexity: orange peel, hazelnuts, beeswax and a very long bittersweet finish.
What it pairs with
-
Turrón de almendras
The almond-and-honey confection harmonises with the wine's hazelnut and off-dry register. -
Aged Iberian pork (secreto ibérico)
The richness of Iberian fat is structured by the wine's dry walnut acidity. -
Crumble with dried apricots
Dried fruit notes in the wine find a natural echo in this dessert.
History
Named after the Apostles, with bottles originally dedicated to twelve distinguished visitors. The Apóstoles solera blends a predominantly old Palo Cortado with a small addition of very old Pedro Ximénez to produce a wine that bridges the two great styles of Jerez. VORS certified at 30+ years average age.
- 1862 — Apóstoles Palo Cortado solera established at González Byass
- 2000 — VORS certification conferred at launch of the classification
