What it pairs with

  • Tortilla española
A classic Spanish tapa combination that showcases dry Amontillado's savouriness.
  • Serrano ham with aged cheese
Salty and nutty, these partners amplify the wine's core flavour register.

History

García de Velasco's Amontillado is the oxidative tier of this small almacenista bodega, aged through the full biological-to-oxidative progression in their Jerez city-centre soleras. Historically the wine was sold in barrel to larger Jerez houses; the bottled release under the García de Velasco label is a more recent development.
