What it pairs with
-
Lobster Thermidor
Appius's creamy lees and dense fruit meet the dish's richness; saline minerality cuts the cream. -
Truffle risotto
Full-bodied white with creamy texture supports white truffle; the wine's saline finish balances umami. -
Roast capon with sage and chestnuts
Full-bodied Chardonnay-led white pairs with poultry; honey and hazelnut notes echo the chestnut.
History
Cantina St. Michael-Eppan launched Appius in the early 2010s as the cellar's signature prestige cuvee under Hans Terzer (in post from August 1977 to September 2024). When should I drink Appius?
Drink between 6 and 25 years from vintage. The wine is engineered for long cellaring and is already 4-6 years into bottle age at release.

A multi-varietal blend (Chardonnay-led with Pinot Bianco, Sauvignon Blanc and Pinot Grigio) whose composition varies vintage to vintage, selected from the cooperative's best parcels.
