What it pairs with
-
Sauternes-style foie gras terrine
The traditional Aszú and foie gras pairing; sweetness and acidity balance the fatty liver. -
Hungarian apricot jam roll (szilvás gombóc with apricot)
The wine's stone-fruit sweetness mirrors the apricot filling. -
Gorgonzola dolce with honey
Mild blue cheese, honey and sweet Aszú is an elegant combination.
History
Tállya's old-vine classified parcels produce Aszú grapes of notable concentration when botrytis conditions arrive. The family makes Aszú only in years when hand-sorted aszú berry quality is sufficient for the five-puttonyos minimum residual sugar requirement.
