What it pairs with

  • Lechazo asado (roast suckling lamb)
The wine's full-bodied oxidative depth and warm complexity match the rich, sweet lamb.
  • Aged Manchego añejo
Very old Oloroso and hard aged sheep's cheese is a classic Castilian-Andalusian combination.
  • Walnuts and dried figs
Walnut notes in the wine are naturally amplified by roasted walnuts and sweet dried figs.

History

José de Soto's old Oloroso is produced from fully oxidative soleras dating to the early 19th century, maintained through successive generations of the Soto family in the historic centre of Jerez. The wine represents the old-style Oloroso that was once the most common premium sherry style before Amontillado and Palo Cortado gained prominence.
