What it pairs with

  • Fourme d'Ambert with honeycomb
The wine's mineral precision and sweetness are a counterpoint to the mild blue cheese and floral honey.
  • Apricot and almond cake
Stone-fruit character in Mád Aszú echoes the apricot filling.
  • Duck liver with toast and pickled cherries
Rich liver and sweet-sour cherry work with the wine's sweetness and firm acidity.

History

Mád is the epicentre of the Tokaj revival and boasts the highest concentration of classified first-class dűlők in the PDO. Jäger Pince sources from small volcanic parcels in this village, producing Aszú of notable mineral depth alongside the expected botrytised richness.
