Palate: sour dried cherry, tobacco, dried herbs, iron, cedar, mineral clay
Made by Demeter-certified biodynamic winemaker Marinella Camerani, Mithas is among the most distinctive Amarone: Demeter-certified estate viticulture produces a wine of unusual earthy complexity, mineral precision and high acidity that evolves beautifully with bottle age.
What it pairs with
-
Braised beef with wild mushroom and polenta
The wine's earthy mineral character and high acidity are a natural match for mushroom-braised beef. -
Truffled polenta with Monte Veronese
Truffle's earthiness and the local cheese's salt resonate with the wine's clay-mineral register.
History
Marinella Camerani founded Corte Sant'Alda in 1986 and converted to biodynamic viticulture, obtaining Demeter certification in 2003. Mithas (from the Latin for something precious) was developed as the estate's flagship Amarone, reflecting the Mezzane valley's calcareous-volcanic terroir and Camerani's minimal-intervention philosophy.
