In the glass
Aroma: fresh cherry, mint, violet, soft cedar, light mineral
Palate: red cherry, floral, cool mint, soft tannin, crisp finish
Second wine of Chateau Canon (formerly Clos Canon, rebranded Croix Canon from the 2012 vintage). Elegant, medium-bodied with mint, cherry and floral character; structured enough for 10+ years but designed for earlier pleasure.
What it pairs with
-
Roast chicken with herbs
Mint and cherry register complements herb-roasted poultry without overpowering; elegant weight is a perfect match. -
Grilled veal chop
Gentle tannin and fresh acidity complement mild veal; floral notes echo herb accompaniments. -
Salmon fillet with lentils
Lighter-bodied wine pairs with the earthy lentils and the rich-but-delicate salmon.
History
The second wine of Chateau Canon was first produced in 2000 under the name Clos Canon, drawing on recently acquired parcels. Following the 2011 acquisition of Chateau Matras, the label was renamed Croix Canon from the 2012 vintage, in honor of the stone cross marking the entrance to the Mazerat chapel. The wine consistently receives strong critical recognition in its own right.
