Domaso is the cooperative's flagship single-vineyard Amarone from the 14-hectare Maternigo hill parcel, showing appreciably greater concentration and mineral precision than the estate-level wine; the earthy, tobacco-cedar style reflects the Maternigo terroir's calcareous character.

What it pairs with

  • Brasato con polenta taragna
The signature Veronese pairing; Domaso's earthy mineral character anchors the starchy buckwheat polenta.
  • Aged Asiago Stravecchio
Sharp, crystalline aged Asiago from the Lessini hills is the quintessential local cheese pairing.

History

The cooperative identified the Maternigo hill parcel as capable of producing single-vineyard quality and established Domaso as their flagship bottling from this 14-hectare block. The name references the ancient Roman settlement that once occupied the Maternigo hilltop.
