Aroma: green apple, white blossom, wax, fennel

Palate: pear, almond, saline, lemon

Clairette-led Bandol white from Terrebrune's organic Triassic terraces at Ollioules. Apple and white-blossom over a saline-driven palate with almond texture and a wax-bound finish.

What it pairs with

  • Bourride
The aioli-thickened Provencal fish stew asks for a structured white; Terrebrune's almond texture and saline depth carry the meal.
  • Grilled rouget
Red mullet's iodine sweetness meets the wine's saline core; the lemon palate refreshes the oily fish.
  • Anchovy and onion tart
Pissaladiere finds a peer in the white's salt and herb register; acidity cuts through caramelised onion.
  • Saffron risotto
Saffron's bittersweet edge meets the wine's wax-and-almond palate; the body handles the cheese-bound rice.

History

Terrebrune launched its Bandol white in the early 1990s after expanding white-grape plantings on the upper Triassic terraces. The cuvee has benefited from the estate's organic-biodynamic farming since 2000 and remains one of Bandol's most precise whites.

  1. 1990 — First commercial Terrebrune Blanc bottled
  2. 2000 — Estate certified organic, sharpening the white's mineral expression
