The estate represents a new generation of precision Ribera del Duero combining Burgundian sensibility with Castilian terroir.

Winemaking is low-intervention: natural yeast fermentations, whole-cluster co-fermentations, foot treading, and ageing in restored 15th-century cellars. Dominio del Aguila's certified-organic winemaking protocol is documented by UK importer Virgin Wines and US importer European Cellars as vegan-friendly: no animal-derived fining agents are used. Foot-treading (pigeage) replaces mechanical punch-down, and no fining is performed before bottling. Their wines are sold with organic labelling in the UK retail market. Vegan status is attributable to the organic-certified, minimal-intervention winemaking process.
